Rose petal syrup.
Part of my Italian childhood was that my father made rose petal jam (and didn’t share it!) XD

I vastly prefer the syrup as an adult and make it from wild roses that bloom around my wife’s birthday. Massage the petals with sugar until a wet play sand consistency is achieved seal with plastic wrap and leave in a cool dark place 8-48 hours. Add to a pot with juice if one lemon and enough water to dissolve the sugar stirring gently with minimum heat. Strain, bottle and refrigerated immediately! The longer this is hot the more you will damage the fragrance.

Not rosey enough for you? Make sure you pick the petals early morning as they just open…….. Or add a splash of edible rose water (we won’t tell)

Don’t want syrup? Stop at the wet play sand stage, cover with a dish towel and allow the mixture to dry completely before bottling up.

Don’t eat sugar? Do this with epsom salts and add to the bath!
